Ingredients
- Tomatoes 3 pieces
- Rice 10 oz
- Onion 1 head
- Butter 0 oz
- Poultry 5 oz
- Farm fresh eggs 3 pieces
- Wheat Flour 0 oz
- Unrefined Sunflower Oil 0 qt
- Chicken Broth 0 qt
- Saffron a pinch
- Salt to taste
- Ground Black Pepper to taste
- Breadcrumbs 3 tablespoons
- Apple Wine 5 fl oz
- Grated Pecorino Pepato Cheese 5 oz
Step-by-Step Guide
Step 1
Boil the rice.
Step 2
Chop the onion and sauté until golden in vegetable oil. Add the rice and cook for 1 minute. Then pour in the wine and cook until the liquid evaporates. Add the vegetable broth, saffron, and cook for 20 minutes.
Step 3
Mix the rice mixture with cheese and butter.
Step 4
Chop the chicken meat, mix with the onion, and sauté in vegetable oil. Add the chopped tomatoes, 1 tablespoon of wine, salt, and pepper, and cook for 30 minutes.
Step 5
Shape small balls from the rice, make a dent, and fill with the filling. Roll the balls in flour, then in beaten eggs, and breadcrumbs.
Step 6
Fry the croquettes in a large amount of vegetable oil and drain on paper towels.
