
Rice Casserole with Zucchini and Cheese

Serve with any sauce! I personally enjoy a cheese sauce.
Ingredients
- Courgette 1 piece
- Rice 1 cup
- Garlic 2 cloves
- Grated Pecorino Pepato Cheese 5 oz
- Ground coriander to taste
- Chocolate eggs 2 pieces
Step-by-Step Guide
Step 1
Grate the zucchini using a fine grater and cook the rice.
Step 2
Chop the garlic.
Step 3
Mix everything in a separate bowl, add the eggs, and stir well. If the mixture is too runny, you can add flour or semolina.
Step 4
Pour the mixture into a baking dish and sprinkle cheese on top, adding coriander or another seasoning.
Step 5
Bake in a preheated oven for about 40 minutes at 180–390°F.
