Rhubarb Chutney
Ingredients
- Rhubarb 0 lbs
- Cinnamon to taste
- Spanish onions 4 heads
- Sugar 4 spoons
- Ginger 0 oz
- Cardamom 6 pieces
- Red Wine Vinegar 5 fl oz
- Scallions 0 oz
Step-by-Step Guide
Step 1
In a deep saucepan, add finely chopped red onion, finely chopped ginger, sugar, a cinnamon stick, and cardamom.
Step 2
Sauté everything over high heat, stirring, for two minutes.
Step 3
Pour in the wine vinegar, add the finely chopped rhubarb, and simmer while stirring for five minutes.
Step 4
Combine with finely chopped green onions and sauté for another two minutes.
Step 5
Remove from heat, take out the cinnamon stick, and let the chutney sit for an hour to infuse.
Step 6
Ready to serve!
