Red peppers with carrots stewed in orange juice with ginger
Ingredients
- Orange Bell Peppers 4 pieces
- Turnips 20 oz
- Olive Oil 2 tablespoons
- Grated Ginger Root 1 tablespoon
- Garlic 2 cloves
- Orange juice concentrate ½ cup
- Coarse Salt to taste
- Scallions 1 bunch
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut the peppers in half and remove the seeds. Chop into small pieces.
Step 2
Peel the carrots and chop them into small pieces as well.
Step 3
In a skillet, heat the olive oil and add the peppers and carrots. Sauté over medium heat for 3 minutes, stirring.
Step 4
Add the ginger and garlic and cook for another minute.
Step 5
Pour in the orange juice and cook for another 5 minutes, until most of the juice has evaporated.
Step 6
Meanwhile, slice the green onions (only the white part) into thin strips.
Step 7
Add the onions to the skillet, season with salt and pepper. Cook, stirring, for another minute and serve.
