Ingredients

  • Red Beans 2 cups
  • Carrots 2 pieces
  • Vegetable Oil 2 tablespoons
  • Tomato Paste 3 tablespoons
  • Dill 1 bunch
  • Basil 1 bunch
  • Parsley to taste
  • Cilantro to taste
  • Turmeric 1 teaspoon
  • Ground red pepper to taste
  • Ground Black Pepper to taste
  • Garlic 2 cloves

Step-by-Step Guide

Step 1

Soak the red beans for 6 hours or overnight. It's better to add plenty of water at once, as the beans will swell.

Step 2

In the morning, rinse the beans, cover them with fresh water, and put them on the stove.

Step 3

After boiling, cover with a lid and cook on low heat for about 1.5 hours (until soft) in UNSALTED WATER! If necessary, you can add water during cooking. Salt 5 minutes before it's done.

Step 4

Peel the carrots and grate them on a coarse grater.

Step 5

Heat the oil in a pan and sauté the carrots for 2–3 minutes over high heat.

Step 6

Add the beans and a little of the bean broth from the pot to the carrots.

Step 7

Add the tomato paste, turmeric, and a little salt. After boiling, reduce the heat and leave covered for 15-20 minutes.

Step 8

5 minutes before it's done, add the pepper, garlic (crushed or chopped), and herbs.

Step 9

Serve with rice, buckwheat, or pearl barley.
