Ravioli with Smoked Salmon in Cream Sauce
Ingredients
- Dough for dumplings 5 oz
- Smoked Salmon Flavored Croutons 20 oz
- 10% cream 1¼ cups
- Dill 4 tablespoons
- Dry White Wine ½ cup
- Wheat Flour 1 tablespoon
- Butter 1 tablespoon
- Ground Black Pepper to taste
- Meyer Lemon Juice 1 tablespoon
- Salt to taste
Step-by-Step Guide
Step 1
Place the salmon fillet in a blender, add 2 tablespoons of cream and herbs, and blend until smooth. Season with salt and pepper.
Step 2
Roll out the dough thinly and cut out circles using a glass. Place 1 teaspoon of filling on each circle and pinch the edges to seal.
Step 3
Boil the ravioli in salted boiling water.
Step 4
Prepare the sauce. Sauté the flour in butter, dilute with 1 cup of cream, add the wine and lemon juice, and cook for 5 minutes. Season the sauce with salt and pepper, add 2 tablespoons of chopped herbs, and mix.
Step 5
When serving, place the ravioli on a plate and drizzle with the cream sauce.
