Description

Ramson and green onions are sautéed until tender, then combined with toasted bread crumbs and poured over with an egg-milk mixture.

Ingredients

  • Butter 5 oz
  • Chocolate eggs 3 pieces
  • Milk 15 fl oz
  • White bread 20 oz
  • Thyme to taste
  • Cream 10 fl oz
  • Scallions 10 oz
  • Ramsons 10 oz
  • Emmental cheese 5 oz

Step-by-Step Guide

Step 1

Sauté the ramson and onions in butter until soft.

Step 2

Place cubed white bread (2 cm) in the oven (390°F) until the cubes turn into golden croutons. Pour the croutons into a deep bowl and mix with the sautéed ramson. Lightly beat the eggs with milk and cream, a pinch of nutmeg, salt, black pepper, and fresh thyme (only the leaves).

Step 3

Layer some of the bread with ramson in the bottom of a baking dish, sprinkle with grated cheese, let it sit for 15 minutes, and then place in the oven (355°F) until the mixture bakes into a solid mass.

Step 4

Serve with dry white wine.
