Qutab with Greens and Sulguni Cheese
Ingredients
- Wheat Flour ½ cup
- Durum wheat ½ cup
- Water ½ cup
- Salt a pinch
- Vegetable Oil ½ teaspoon
- Parsley 1 bunch
- Scallions 1 bunch
- Dill 1 bunch
- Suluguni Cheese 5 oz
- Toasted Cumin Seeds 1 teaspoon
Step-by-Step Guide
Step 1
Knead a stiff dough from flour, water, salt, and a few drops of vegetable oil. Wrap it in plastic wrap and place it in the refrigerator for an hour.
Step 2
Wash the greens, dry them, and chop finely. Grate the cheese on a coarse grater and mix it with the greens.
Step 3
Divide the dough into three parts and roll them out into flatbreads, sprinkling each with cumin on top.
Step 4
On one half, place the greens with cheese, cover with the other half, and pinch the edges with a fork.
Step 5
Heat a skillet with just a few drops of vegetable oil. Fry the qutabs alternately on each side until they are golden brown.
Step 6
Serve hot.
