
Quick Tomato Sauce with Basil and Garlic

This recipe comes from a close friend of our editorial team — Italian chef Mike Johnson. As the author says: "This sauce can be used for pizza, pasta, or as a base for tomato soup (diluted with broth or water). It's delicious spread thickly on bread, and we will be dipping croutons into it. The foundation of this sauce is fresh tomato juice — it results in a smoother, more homogeneous, and richer sauce than using pureed pulp. However, it does require a bit more tomatoes for this sauce."
Ingredients
- Tomatoes 30 oz
- Garlic 1 clove
- Fresh basil leaves 1 sprig
- Salt to taste
Step-by-Step Guide
Step 1
Chop the tomatoes coarsely and extract the juice by either straining them through a sieve or using a juicer.
Step 2
Pour the tomato juice into a saucepan, add a halved garlic clove, and reduce it by two-thirds.
Step 3
Remove the garlic and add a sprig of basil. Allow to cool and season with salt to taste.
