Quick Spicy Pickled Mackerel
Ingredients
- Mackerel 5 lbs
- Onion 1 head
- Green peppercorns 7 pieces
- Allspice berries 7 pieces
- Bay leaf 7 pieces
- Salt 7 tablespoons
- Water 0 qt
Step-by-Step Guide
Step 1
In a pot, place the salt, bay leaves, pepper, and the onion cut into 4 pieces. Pour in hot water.
Step 2
Bring to a boil. Cook until the onion falls apart into petals (about 10 minutes).
Step 3
Cool the brine.
Step 4
Cut the mackerel into pieces about 1 cm wide and place in the cooled (slightly warm) brine for 50 minutes.
Step 5
Remove the fish from the brine to prevent over-salting. Store in a closed container.
