Quick Seafood Pasta

Ingredients

  • Green Tagliatelle Pasta 10 oz
  • Squid 10 oz
  • Mussels 10 oz
  • Clam juice 10 oz
  • Sea urchin roe 4 pieces
  • Garlic 1 clove
  • Parsley 0 oz
  • Lemon 1 piece
  • Mild Chili Spice 1 piece
  • Olive Oil 0 fl oz
  • Capers 1 tablespoon
  • Baking Tomatoes 15 oz
  • Parmesan Cheese 0 oz
  • Olive Oil to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Cook the linguine in a large pot of boiling salted water according to the package instructions, then drain, reserving a full cup of starchy water.

Step 2

Meanwhile, cut the squid into 1 cm rings, sort the mussels and clams, and rinse any that are slightly open. Discard any that do not close. Slice 4 scallops.

Step 3

Peel and finely chop the garlic, chop the parsley leaves, and finely grate the zest of 0.5 lemon. Finely chop the red chili pepper.

Step 4

Heat a large non-stick skillet over medium-high heat with 1 tablespoon of olive oil. Add the garlic, chili pepper, and capers, cooking for 1 minute, then add the clams and mussels. Cook for 2 minutes, then add the squid, scallops, lemon zest, and parsley, and mix well.

Step 5

Crush the peeled tomatoes with clean hands, bring to a boil, then reduce the heat and simmer for 2 minutes to blend the flavors, stirring regularly and crushing the tomatoes.

Step 6

Squeeze the juice from 0.5 lemon. Shake the skillet and simmer for another 1 minute or until fully cooked (discard any remaining unopened shells).

Step 7

Remove the skillet from the heat and, if desired, carefully remove the meat from the shells.

Step 8

Grate 20 grams of parmesan, then taste and season as needed, adding a bit of lemon juice if necessary.

Step 9

Add the pasta to the sauce, adding reserved pasta cooking water if needed, then drizzle with extra virgin olive oil.
