
Quick Salmon, Shrimp, and Scallop Ceviche

Description
Pairs wonderfully with a neutral salad like fennel slaw or any fennel salad.
Ingredients
- King Prawns 4 pieces
- Salmon 5 oz
- Scallops 6 pieces
- Mild Chili Spice to taste
- Lime 2 pieces
- Scallions 2 stalks
- Cilantro ½ bunch
- Parsley ½ bunch
Step-by-Step Guide
Step 1
Clean the salmon or any other red fish, removing the skin and cutting it into cubes about 1 cm.
Step 2
Peel the shrimp (raw) and cut them into pieces approximately 1 cm.
Step 3
Cut the scallops into the same size.
Step 4
For the marinade, finely chop the chili (the amount of chili is a matter of taste; you can skip it altogether). Pour in the freshly squeezed juice of 2 limes.
Step 5
Add the finely chopped white part of the green onion, as well as the chopped stems of cilantro and parsley. Set aside the leaves of cilantro and parsley for garnish.
Step 6
Marinate for 30 minutes in the refrigerator.
Step 7
When serving, sprinkle with freshly chopped leaves of parsley and/or cilantro.
