Ingredients

  • Eggplants 5 pieces
  • Tomatoes 3 pieces
  • Garlic 3 heads
  • Salt to taste
  • Ground Black Pepper to taste
  • Mayonnaise 2 tablespoons

Step-by-Step Guide

Step 1

Place the eggplants on a baking sheet, after washing them, and prick them in several places with a fork.

Step 2

Put them in the oven for 30 minutes, preheating it to 390°F. You can vary the cooking time for the eggplants, just make sure they end up soft and slightly reduced in size.

Step 3

After taking them out of the oven, let the eggplants cool and peel off the skin. Then pour boiling water over the 3 tomatoes to easily remove the skin.

Step 4

Chop the eggplants, tomatoes, and garlic in a blender or meat grinder.

Step 5

The last step is to season with salt and pepper to taste and add a little mayonnaise.
