  • Tomatoes 3 pieces
  • Cilantro 1 bunch
  • Mild Chili Spice 2 pieces
  • Lime 1 piece
  • Garlic 5 cloves
  • Tortillas 4 pieces
  • Butter 0 oz
  • Olive Oil 0 fl oz
  • Cardamom 3 pieces
  • Ground Cinnamon a pinch
  • Toasted Cumin Seeds a pinch
  • Ground clove 3 pieces
  • Garam Masala 1 teaspoon
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

First, let's prepare the minced lamb. Cut the meat into small pieces and chop 1 large onion into large chunks. Sauté the onion in butter and pass it through a meat grinder along with the meat, without trimming the fat, adding 3 cloves of garlic. Next, extract the seeds from the cardamom pods.

Step 2

In a mortar, crush the cardamom seeds, cloves, and cumin seeds, add the ground cinnamon and garam masala spice mix, mix everything together, and add it to the minced lamb. Season the mixture with salt and pepper to taste. Dice the tomatoes, peppers, and onion into small cubes, finely chop the chili and garlic. Then, sauté the vegetables in olive oil, previously drizzled with lime juice. In a separate pan, sauté the minced meat in a mixture of butter and olive oil.

Step 3

Preheat a grill pan. On half of the tortilla, place grated cheese, chopped cilantro, then the minced meat, vegetables, more cilantro, and then cheese again. Cover with the other half of the tortilla and grill on both sides for 2–3 minutes. Cut the finished tortillas into small triangles.

Serve the quesadilla with guacamole, salsa, and sour cream, pour some tequila, and enjoy new discoveries and flavors with friends!
