Ingredients
- Papaya flesh 1 piece
- Quinoa 1 cup
- Pineapple 2 pieces
- Natural Yogurt 4 tablespoons
- Shelled pumpkin seeds 2 tablespoons
- Meyer Lemon Juice 2 teaspoons
- Mint to taste
Step-by-Step Guide
Step 1
Rinse quinoa in cold water and let it soak for 15 minutes, then rinse under running water.
Step 2
Heat a non-stick skillet over medium heat, add the quinoa in a thin layer, and toast, stirring, until the water evaporates and the grains turn golden.
Step 3
Dice the papaya and pineapple, and chop the mint.
Step 4
Layer in a serving bowl in the following order: quinoa, pineapple, lemon juice, papaya, yogurt, pumpkin seeds, mint.
