Pumpkin Seed and Cilantro Pesto
Ingredients
- Olive Oil 6 tablespoons
- Shelled pumpkin seeds 2 cups
- Garlic 3 cloves
- Water ½ cup
- Chopped Green Onions 1 cup
- Green onion tops 4 pieces
- Salt to taste
- Meyer Lemon Juice 3 tablespoons
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a skillet, heat the olive oil, add the seeds, season with salt and pepper, and cook, stirring, for 4 minutes until golden brown.
Step 2
Add the minced garlic and sauté for another minute. Transfer everything to a plate and let it cool.
Step 3
In a blender, combine the seeds with garlic, the remaining olive oil, water, cilantro, and chopped green onions. Blend until it reaches a paste-like consistency, but not completely smooth.
Step 4
Transfer to a bowl and add lemon juice, salt, and pepper.
