  • Onion 1 head
  • Pumpkin 20 oz
  • Vegetable Oil 2 tablespoons
  • Pickled Apples 20 oz
  • Grated Ginger Root a pinch
  • Citrus Zest Mix 0 oz
  • Cinnamon ⅓ teaspoon
  • Ground coriander 1 teaspoon
  • Sugar 5 oz
  • Salt a pinch

Step-by-Step Guide

Step 1

Sauté the chopped onion in vegetable oil. Add diced pumpkin, roughly chopped apples, ginger, finely grated zest of one lemon, cinnamon, coriander, sugar, and salt, and simmer everything, stirring frequently, for about 20 minutes over low heat. The apples should completely break down, while the pumpkin should remain slightly firm.

Step 2

Remove the lemon peel and distribute the contents, while still hot, into jars. Seal them. Store in a cool place.
