Pumpkin Pie with Goat Cheese

Ingredients

  • Puff Pastry 20 oz
  • Pumpkin 10 oz
  • Courgette 1 piece
  • Garlic 3 cloves
  • Butternut Squash 5 oz
  • Olive Oil 2 tablespoons
  • 10% cream ¼ cup
  • Citrus Zest Mix ½ teaspoon
  • Goat cheese 5 oz
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Preheat the oven to 390°F. Line a baking dish with parchment paper and grease it with oil. Place a sheet of puff pastry in the dish. Trim any excess pastry. Prick the pastry with a fork and cover it with another sheet of parchment paper. Pour peas or beans on top of the paper to prevent the pastry from puffing up. Bake for 20 minutes until golden brown. Remove from the oven and let cool.

Step 2

On a baking sheet greased with olive oil, place the diced butternut squash and garlic cloves. Season with salt and pepper. Roast in the oven until golden brown, about 30 minutes. Remove and let cool slightly. Place in a blender with the cream and 1 tablespoon of goat cheese; blend until smooth.

Step 3

Slice the yellow pumpkin and zucchini into thin rings.

Step 4

Spread the pumpkin mixture over the cooled crust. Layer the pumpkin and then the zucchini on top, overlapping them, and sprinkle with crumbled goat cheese. Bake in the oven for approximately 30 minutes. Serve warm or at room temperature.
