Ingredients

  • Pumpkin 10 oz
  • Olive Oil 2 tablespoons
  • Garlic 4 cloves
  • Thyme ½ bunch
  • Salt to taste
  • Ground Black Pepper to taste
  • Chocolate eggs 4 pieces
  • Melted Cheese 5 oz
  • Parmesan Cheese 0 oz

Step-by-Step Guide

Step 1

Preheat the oven to broil;

Step 2

Peel the pumpkin and cut it into small pieces;

Step 3

Peel 2 cloves of garlic and slice them;

Step 4

Place the pumpkin in a small baking dish, lightly drizzle with olive oil, add garlic, season with salt and pepper, sprinkle with half of the thyme leaves, and bake in the oven on broil for 10 minutes;

Step 5

Crack the eggs into a deep bowl, season with salt and pepper, and whisk with a fork; add the remaining finely chopped garlic, diced mozzarella, and half of the grated Parmesan — mix everything together;

Step 6

Remove the dish from the oven, pour the egg mixture over the pumpkin, sprinkle with the remaining grated cheese, and bake under the broiler for another 5–7 minutes;

Step 7

Sprinkle the finished frittata with the remaining thyme leaves.
