Pumpkin Curd Fritters

Ingredients

  • Pumpkin 5 oz
  • Ground Oats 1⅖ cups
  • Curd 5 oz

Step-by-Step Guide

Step 1

Mix the soft low-fat curd with the oat groats and let it sit for about 10-15 minutes so that the oats soften a bit.

Step 2

While the oats are softening, boil the pumpkin, previously cut into cubes. Cook until partially tender, about 5 minutes in boiling water.

Step 3

Once the pumpkin is cooked, make it into a puree. I used a potato masher, but you can also use a blender for a completely smooth texture, unlike mine which is a bit fibrous. It's up to your preference :)

Step 4

Combine the oat mixture with the pumpkin puree, distribute into molds, and bake in the oven for about 20 minutes at 375°F.

Step 5

Let them cool; they will firm up and can be removed from the molds. Or you can enjoy them warm straight from the molds :)
