Ingredients
- Pumpkin 20 oz
- Applesauce 1 cup
- Brown Sugar ⅓ cup
- Ground Cinnamon ¾ teaspoon
- Grated Ginger Root ¼ teaspoon
- Meyer Lemon Juice 2 tablespoons
Step-by-Step Guide
Step 1
Cook the pumpkin and make it into a puree.
Step 2
In a small saucepan, combine the pumpkin puree with the applesauce, sugar, cinnamon, and ginger.
Step 3
Bring the mixture to a boil and simmer on low heat, stirring frequently, for 45 minutes (or until it thickens).
Step 4
Remove from heat and mix in the fresh lemon juice.
Step 5
Let it cool, then transfer to an airtight container and place in the refrigerator.
Step 6
It can be served with pancakes, spread on toast, etc., as a dietary alternative to butter, peanut butter, chocolate spread, etc.
