- Butternut Squash 20 oz
- Olive Oil 2 tablespoons
- Apple Cider Vinegar 1 tablespoon
- Salt ¼ teaspoon
- Ground Black Pepper ¼ teaspoon
- Dried Apricots 0 oz
- Dried cranberries with sugar 0 oz
- Chopped Sage Leaves 2 tablespoons
- Chopped almonds 2 tablespoons
Step-by-Step Guide
Step 1
Cut the pumpkin lengthwise into 4 pieces, remove the seeds, and slice thinly crosswise.
Step 2
Steam the pumpkin until tender for 5–7 minutes.
Step 3
In a large bowl, mix the vinegar, salt, pepper, and olive oil. Add the pumpkin, finely chopped dried apricots, and cranberries. Toss, sprinkle with nuts, and serve.
