
Pumpkin and Sage Carbonara Pasta

Any type of pasta can be used.
Ingredients
- Pasta (corkscrew) 10 oz
- Semi-Smoked Sausage 6 pieces
- Pumpkin 15 oz
- Garlic 1 clove
- Chopped Sage Leaves 1 tablespoon
- Ground Black Pepper to taste
- Egg white 2 pieces
- Cream (40%) 2 tablespoons
- Grated Pecorino Pepato Cheese 0 oz
Step-by-Step Guide
Step 1
Cook the pasta in boiling salted water until al dente.
Step 2
Meanwhile, in a skillet, fry the bacon cut into thin strips until golden. Add 2 cups of peeled and diced pumpkin, finely chopped garlic, sage, and black pepper. Mix well.
Step 3
In a bowl, combine the egg yolks, cream, and parmesan.
Step 4
Drain the pasta, reserving a little liquid.
Step 5
Add the pasta to the skillet and mix well. Remove the skillet from heat and let it sit for 2 minutes.
Step 6
Pour in the egg mixture and quickly stir. Then add a little pasta water and mix again.
Step 7
Serve, garnished with sage leaves.
