Pulled beef with caramelized carrots
Ingredients
- Carrot 20 oz
- Veal Tenderloin 30 oz
- Sugar 0 oz
- Sesame bun 0 oz
- Star anise 0 oz
- Vegetable Oil 10 fl oz
- Black Cumin (Cumin) 0 oz
- Cinnamon 1 piece
- Soy Sauce 1 tablespoon
- Soy Sauce 2 spoons
- Corn Starch 0 oz
- Thai Bird's Eye Chili 0 oz
- Leek 0 oz
- Garlic 1½ cloves
Step-by-Step Guide
Step 1
For the spicy oil, finely chop the chili pepper, leeks, and garlic. Heat vegetable oil in a pan until hot, then blanch the chopped vegetables in the oil. Afterward, let it cool and strain through a fine sieve.
Step 2
Boil the beef until cooked, adding star anise, cinnamon, cumin, and soy sauce. Let it cool and then tear it into small pieces by hand, removing any fat and sinew.
Step 3
Peel the carrot and cut it into thin strips, then transfer it to a bowl. Dissolve the sugar in 50 ml of water, and add the resulting syrup to the carrots, mixing well. Deep-fry the carrots until golden brown. Transfer them to a paper towel and let them sit for a few minutes. Then, in the bowl, mix with sesame seeds and hot oil.
Step 4
Sprinkle the shredded beef with corn starch and fry it in hot oil until golden brown.
Step 5
Before serving, place the beef in deep plates, and then top it with the carrots.
