
Puff Pastry Swirls with Tapenade

Description
This tapenade can be used as an accompaniment to many appetizers.
Ingredients
- Puff Pastry 1 piece
- Pitted olives 1 can
- Pickled capers 1 tablespoon
- Salted crackers 3 pieces
- Garlic 0 oz
- Olive Oil 2 tablespoons
- Dijon Mustard 1 teaspoon
- Lime Juice 1 teaspoon
Step-by-Step Guide
Step 1
First, let's prepare the tapenade. The easiest way is to use a blender, but for authenticity, I used a mortar and pestle. I drained the brine from the olives and mashed them in the mortar until they formed a coarse paste. Don't mash too much; you should still feel the pieces.
Step 2
I transferred the olives to a bowl and mashed the anchovies and capers in the mortar. I squeezed in the garlic as well. I returned the olives, added the mustard and olive oil, lime juice, and mixed everything well.
Step 3
Now, roll out the pastry sheet to a thickness of 2–3 millimeters and evenly cover it with the tapenade.
Step 4
Roll the pastry from both sides towards the center and cut into swirls. It's best to use a cheese cutter (thin metal wire), but a bread knife works quite well too.
Step 5
Bake in the oven at 355°F until golden brown.
