Prunes with Gorgonzola
Ingredients
- Prunes 20 oz
- Goat cheese 5 oz
- Butter 0 oz
- Brandy 0 fl oz
- Sugar 0 oz
- Clove 2 pieces
- Pistachios 0 oz
Step-by-Step Guide
Step 1
Rinse the prunes, pour boiling water over them, and let them soak for an hour. Drain the dark water into the sink. In a skillet, melt the butter and sauté the prunes and cloves for two to three minutes, stirring constantly.
Step 2
Then pour a shot of brandy into the skillet (plum brandy is preferable, but young Armenian cognac will work just fine), sprinkle with sugar and pine nuts, and simmer while stirring until all the brandy (or cognac) has evaporated.
Step 3
Remove from heat, sprinkle with crumbled Gorgonzola cheese, and serve while hot.
