Provençal Stuffed Tomatoes

A quintessential Provençal appetizer, also a classic side dish for any meat. The tomatoes are served cold as an appetizer. For a side dish, they are typically warmed up.
Ingredients
- Tomatoes 12 pieces
- White bread 5 oz
- Spanish onions 2 heads
- Garlic 12 cloves
- Parsley 5 oz
- Butter 5 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
It's best to use tomatoes that weigh around 100 grams, about the size of a large chicken egg. Cut off the tops of each tomato and scoop out the insides — the juice and seeds — with a spoon.
Step 2
Sauté finely chopped onion in butter until soft, then add garlic and cook until a strong garlic aroma develops.
Step 3
Mix the vegetables with finely chopped parsley leaves and fresh bread crumbs, season with salt and pepper, and remove from heat. By the way, you can easily make bread crumbs by placing a piece of bread in a blender and turning it on. In just two seconds, you'll have the finest and most even crumbs at your disposal.
Step 4
Stuff the tomatoes with the vegetable and bread mixture and place them in the oven for twenty minutes. Then remove and serve as an appetizer or side dish.
