Description

Adding jam is optional. You can use a variety of berries as filling: it will be especially delicious with blueberries and currants! The berries can be either fresh or frozen.

Ingredients

  • Egg white 3 pieces
  • Raw cane sugar 0 oz
  • Vanillin 1½ g
  • Semolina 5 tablespoons
  • Semi-soft cream cheese 20 oz
  • Red Currant 5 oz
  • Black Currant Jam 1 teaspoon
  • Ground Cinnamon ½ g

Step-by-Step Guide

Step 1

Preheat the oven to 355°F (mark 5). Prepare a silicone rectangular mold 10x20 cm.

Step 2

Using a mixer, beat the egg whites with sugar and vanillin until stiff peaks form.

Step 3

Add the cottage cheese to the mixture and beat until smooth.

Step 4

Gradually add the semolina (5 tablespoons - approximately 70 grams) to the smooth mixture. Mix well with a spoon.

Step 5

You can then add a spoonful of jam or jelly to taste, then gently fold in the berries.

Step 6

Pour the prepared batter into the silicone mold so that it fills evenly. Sprinkle cinnamon on top.

Step 7

Bake for about 45 minutes, until the casserole rises. You can brown the crust under the broiler in the oven.

Step 8

Once ready, remove the casserole from the oven, run a sharp knife around the edges of the mold to loosen it, and let it cool.

Step 9

The casserole can be served warm or cold.
