Preserved Lemons
Appetizers • Moroccan
Description
The flavor of preserved lemons not only lasts a long time but also intensifies several times over. This is well known among culinary enthusiasts who prepare preserved lemons and use them in dishes as a seasoning.
Ingredients
- Lemon 0 lbs
- Green peppercorns 1 tablespoon
- Bay leaf 3 pieces
- Salt 10 oz
- Olive Oil 5 fl oz
Step-by-Step Guide
Step 1
Wash the lemons (it's better to choose smaller ones to make it easier to fit them into the jar), and make incisions in them as if you were cutting them into six pieces, but do not cut all the way through.
Step 2
From the two cut lemons, first squeeze the juice into a liter jar using your hands, then place all the lemons (including those already juiced) into the jar. Add salt, pepper, bay leaves, and pour in olive oil to cover everything.
Step 3
The lemons should be aged for at least a month, and then they can be added to any savory dishes, such as stews, while the oil can be used in salads.
