
Potatoes with Tomatoes and Basil

Description
This dish pairs wonderfully with grilled meats and seafood. Instead of basil, you can use oregano.
Ingredients
- Potato 25 oz
- Olive Oil ¼ glasses
- Onion 1 head
- Garlic 2 cloves
- Tomatoes 3 pieces
- Salt to taste
- Ground Black Pepper to taste
- Chili Flakes a pinch
- Fresh basil leaves 3 spoons
Step-by-Step Guide
Step 1
Preheat the oven to 375°F.
Step 2
In a bowl, combine the potatoes cut into small wedges, finely chopped onion, minced garlic, and olive oil. Season with salt and pepper, and add red pepper flakes. Transfer to a baking dish and roast until tender and golden, about 30-40 minutes.
Step 3
Increase the oven temperature to 390°F. Remove the seeds from the tomatoes and cut them into medium-sized wedges. Add them to the potatoes and place in the oven for an additional 10 minutes.
Step 4
Remove from the oven, toss with 3 tablespoons of chopped basil, and serve.
