Potatoes with Peppers
Ingredients
- Salt to taste
- Orange Bell Peppers 4 pieces
- Farm fresh eggs 2 pieces
- Safflower Oil 15 fl oz
- Salad Potatoes 6 pieces
- Red Long Chili Peppers 1 piece
Step-by-Step Guide
Step 1
Boil the eggs hard. Preheat the oven to 355°F. Place the red pepper on parchment paper and bake, turning occasionally, for 10-20 minutes until the skin starts to blister. Then place the pepper in a deep bowl and cover with a paper towel. Once it cools enough, peel the skin, remove the stem and seeds, and slice the pepper into strips. Season with salt and set aside.
Step 2
Place the washed, unpeeled potatoes in a pot with cold water and a teaspoon of salt. Bring to a boil and cook for 20-30 minutes until the potatoes are soft. Drain the water.
Step 3
Meanwhile, heat the sunflower oil in a deep skillet, add the green peppers cut into large squares, season with salt, cover with a lid, and cook over medium heat for 15-20 minutes until they become soft. Remove them with a slotted spoon.
Step 4
Preheat the oven to 390°F. Transfer 3 tablespoons of oil from the skillet to a baking dish. Peel the potatoes, trimming the edges so they can stand upright. Arrange them in a single layer in the dish. Season with salt and drizzle with oil from the skillet. Top each potato with a piece of red pepper and a slice of egg. Place the green peppers around the edge of the dish. Bake for 10 minutes. Serve immediately.
