Ingredients

  • Salt to taste
  • Parsley 1 stalk
  • Saffron to taste
  • Garlic 1 clove
  • Wheat Flour 1 tablespoon
  • Salad Potatoes 5 lbs
  • Tomatoes 2 pieces
  • Green peppercorns 3 pieces
  • Onion 1 piece
  • Olive Oil 6 tablespoons

Step-by-Step Guide

Step 1

Finely chop the onion. Remove seeds from the peppers and cut them into cubes. Peel the tomatoes and chop them finely. Cut the potatoes into small pieces.

Step 2

Heat the olive oil in a small skillet, add the onion, and cook, stirring, for 3 minutes. Then add the peppers and tomatoes and cook for another 8 minutes. Transfer the mixture to a large pot and set it over low heat.

Step 3

Add the potatoes and mix in the flour. Crush the garlic in a mortar with a pinch of salt, parsley, and saffron. Pour in 2-3 tablespoons of water, mix well, then pour into the pot with the potatoes. If necessary, add more water to cover the potatoes.

Step 4

Bring to a boil, then reduce the heat and simmer for 20-30 minutes until the potatoes are soft. Serve immediately.
