Potatoes with Egg Yolk
Ingredients
- Salad Potatoes 8 pieces
- Egg white 8 pieces
- Cream 5 fl oz
- Champagne Vinegar 0 fl oz
- Mixed Ground Peppers to taste
- Ground Nutmeg to taste
- Ocean salt to taste
Step-by-Step Guide
Step 1
In a bowl, whip the cream, adding a pinch of spices and vinegar, until smooth and refrigerate.
Step 2
Wash and boil the potatoes in their skins over low heat for 25–30 minutes (check for doneness with the tip of a knife).
Step 3
Cut the top off each potato, then use a spoon to create a hollow in each. Place the potatoes in egg cups and pour an egg yolk into each: the hot potato will warm the yolk to the right temperature. Carefully top with a spoonful of whipped cream, season lightly with spices, and serve immediately.
