Potato Tartlets with Cumin and Basil "Amore"

Ingredients

  • Potatoes 2 pieces
  • Shortcrust Pastry 5 oz
  • Cheese 0 oz
  • Butter 0 oz
  • Wheat Flour 2 tablespoons
  • Onion 1 piece
  • Milk 5 fl oz
  • Sour Cream 0 oz
  • Cumin to taste
  • Basil to taste
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Grate the potatoes into slices (thin circles) and place them in water.

Step 2

Make the sauce. Melt the butter in a saucepan, add the flour and lightly sauté. Add the cream and milk, mix well. Simmer until slightly thickened. Add basil, salt, and pepper. (Like béchamel, but with basil instead of nutmeg)

Step 3

Slice the onion into half-rings and sauté in vegetable or olive oil until soft.

Step 4

Spread the pastry in a thin layer in tartlet molds.

Step 5

Spread with sauce. Place the onion in the center, followed by the potatoes. Again, spread with sauce, sprinkle with grated cheese, basil, and cumin. Season with salt and pepper.

Step 6

Bake at medium heat for 45-50 minutes until cooked through. The potatoes should be soft. (If you have issues with the oven, first boil the sliced potatoes for 10-12 minutes before assembling the tartlets.)
