Ingredients
- Salad Potatoes 5 lbs
- Butter 0 oz
- Milk 10 fl oz
- Nutmeg a pinch
- Egg white 4 pieces
- Salt to taste
Step-by-Step Guide
Step 1
Place the potatoes in a pot, cover with water so that they are completely submerged, and add a pinch of salt. Bring the water to a boil and cook the potatoes for 20–30 minutes until they are soft but not falling apart.
Step 2
Meanwhile, preheat the oven to 390°F and grease a 22 cm soufflé dish with butter. Drain the water from the potatoes and press them through a sieve into a bowl. While the puree is still warm, add the butter and gradually incorporate the hot milk in small portions.
Step 3
In a dry, clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Pour everything into the dish and bake for 45 minutes until a golden crust forms. Serve immediately after cooking.
