Description

Latkes are a traditional treat for the Jewish holiday Hanukkah, but these very tasty crispy potato pancakes are great as a snack or for dinner.

Ingredients

  • Salad Potatoes 25 oz
  • Onion 2 heads
  • Wheat Flour 4 tablespoons
  • Baking Powder 1 teaspoon
  • Farm fresh eggs 2 pieces
  • Salt 1 teaspoon
  • Sugar ½ teaspoon
  • Ground Black Pepper ½ teaspoon
  • Vegetable Oil 5 fl oz
  • Red Caviar 1 jar
  • Natural Yogurt ½ cup

Step-by-Step Guide

Step 1

Chop the onion. Lightly beat the eggs. Mix the eggs and onion with flour, baking powder, sugar, salt, and pepper.

Step 2

Grate the potatoes on a coarse grater, place in a colander, and squeeze out excess moisture. Transfer the potato shreds to a bowl and mix with the batter.

Step 3

Pour a few millimeters of vegetable oil into a heavy skillet and heat.

Step 4

Drop spoonfuls of the batter into the skillet. Fry over medium heat for 3-4 minutes until golden brown, flip, and fry on the other side.

Step 5

Remove the latkes from the skillet with a slotted spoon and drain on paper towels or a napkin. Place in a warm oven to keep warm.

Step 6

Top each pancake with a spoonful of yogurt or sour cream, and garnish with red caviar. Serve hot.
