Potato Galettes with Leeks

Ingredients

  • Butter 6 tablespoons
  • Salad Potatoes 50 oz
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Leek 1 piece
  • Grated Chocolate 5 oz

Step-by-Step Guide

Step 1

Trim the dark green leaves and roots from the leek. Cut the remaining parts in half lengthwise and slice thinly. Rinse under cold water. Peel the potatoes.

Step 2

Preheat the oven to 375°F. Line the bottom of a round baking dish with parchment paper (approximately 23–25 cm in diameter).

Step 3

In a large bowl, place the softened butter and slice the potatoes into thin rounds using a mandoline. Season with salt and pepper and mix well.

Step 4

Arrange a small amount of potatoes in a circle in the dish, covering the entire bottom. Sprinkle with half of the leeks and half of the cheese, season with salt and pepper. Layer with another layer of potatoes, then a layer of leeks and cheese, seasoning again with salt and pepper. Cover with the remaining potatoes and press down slightly.

Step 5

Bake until the potatoes are tender, about 70–80 minutes, pressing down lightly a couple of times during cooking.

Step 6

Carefully transfer to a plate and cut into wedges.
