  • Salad Potatoes 5 lbs
  • Leek 6 pieces
  • Butter 6 tablespoons
  • Thyme 1 tablespoon
  • Milk 10 fl oz
  • Cream 5 fl oz

Step-by-Step Guide

Step 1

Place the potatoes in a pot of cold water, bring to a boil, and cook until tender, about 35-45 minutes.

Step 2

Meanwhile, melt 4 tablespoons of butter in a large skillet and add the finely chopped leeks. Sauté until soft over low heat, then add the chopped thyme, salt, and pepper to taste.

Step 3

Drain the potatoes and return them to the pot. Dry them over low heat for about a minute and let them cool slightly. Peel and mash through a sieve or mash them.

Step 4

In a small saucepan, heat the milk and cream. Incorporate them into the potatoes. Then add the leeks, season with salt and pepper.

Step 5

Transfer the potato mixture to a buttered baking dish, smooth it out, cover, and refrigerate for 1 day.

Step 6

Preheat the oven to 355°F.

Step 7

Top the potato mixture with pieces of butter and place it in the oven, covered with foil, until heated through and the butter has melted, about 15 minutes.
