Potato and Pear Purée with Leeks

Ingredients

  • Salad Potatoes 5 lbs
  • Pears 30 oz
  • Butter 8 tablespoons
  • Leek 0 oz
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Grease a glass dish with butter.

Step 2

Peel the potatoes and cut them into cubes. Boil half of the potatoes and half of the peeled, cubed pears in boiling salted water until soft, about 15 minutes. Transfer to a large bowl, cover, and keep warm. Repeat the same with the remaining potatoes and pears. Return everything to the pot and add 6 tablespoons of butter. Mash the vegetables and fruits to make a purée. Season with salt and pepper.

Step 3

Melt 2 tablespoons of butter in a skillet. Add the thinly sliced leek and sauté until soft, about 5 minutes. Transfer half of the leek to the purée and mix well. Spoon the mixture into the prepared dish and top with the remaining leek.
