Potato and Mushroom Gratin

Ingredients

  • Olive Oil 5 tablespoons
  • Salad Potatoes 40 oz
  • Coarse Salt 2 teaspoons
  • Ground Black Pepper 1 teaspoon
  • Whipped Cream 1½ cups
  • Grated Pecorino Pepato Cheese 5 oz
  • Ground Caraway 2 tablespoons
  • Garlic 6 cloves
  • Fresh Mushrooms 10 oz

Step-by-Step Guide

Step 1

Preheat the oven to 375°F. Grease an oval baking dish with oil. Slice the potatoes thinly and layer one-third at the bottom of the dish. Sprinkle with salt and pepper. Pour 0.3 cups of cream on top and sprinkle with 0.25 cups of grated cheese. Repeat the layers 2 more times. Bake for about 45 minutes until the potatoes are tender and golden brown. Remove from the oven and keep warm.

Step 2

Sprinkle with caraway seeds and minced garlic on top. In a bowl, combine the sliced mushrooms with 3 tablespoons of oil, and season with salt and pepper. Arrange the mushrooms in a circle on the gratin and pour a quarter cup of cream over them, then sprinkle with a quarter cup of cheese. Return to the oven for another 20 minutes.

Step 3

Cool for one hour, cover, and let cool completely. Before serving, cut into 10 pieces. Place on a baking sheet, cover with foil, and heat in the oven for 10-15 minutes at 355°F.
