Description
Serve this sauce with fish.
Ingredients
- New Potatoes 6 pieces
- Garlic 2 cloves
- Olive Oil to taste
- Lemon 1 piece
Step-by-Step Guide
Step 1
Boil the potatoes in their skins. Let them cool slightly, dry, and peel. In a large mortar (or bowl), crush the garlic with a small pinch of salt, then add the still warm potatoes and mash them together with the garlic until smooth.
Step 2
Squeeze the juice of 1 lemon and then, in a thin stream, add the oil to the potatoes, garlic, and lemon juice while continuously stirring. If the sauce is too thick, add a little more lemon juice or plain room temperature water. Continue to add oil until the mixture becomes glossy. If necessary, squeeze the juice of another lemon for a brighter flavor.
