Poached salmon fillet with mayonnaise and watercress sauce
Ingredients
- Mayonnaise 7½ tablespoons
- Watercress 0 oz
- Dijon Mustard 1 tablespoon
- Meyer Lemon Juice 1 teaspoon
- Water 5 fl oz
- Dry White Wine 5 fl oz
- Shallot 1 piece
- Parsley 10 oz
- Thyme 1 sprig
- Smoked haddock fillet 0 lbs
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a small bowl, mix mayonnaise, finely chopped watercress, mustard, and lemon juice. Season with salt and pepper to taste.
Step 2
In a large skillet, combine water, wine, finely chopped shallot, sprigs of parsley, and thyme. Place the fish, cut into 6 pieces, season with salt and pepper. Cover partially and cook over medium heat for about 10 minutes, until the fish is opaque in the center. Remove from heat, cover, and let sit for 5 minutes. Transfer to a plate. Cover with plastic wrap and chill for 4 hours.
Step 3
Arrange on plates and serve with the prepared sauce.
