Ingredients

  • Chicken Egg 1 piece
  • Lightly Salted Red Fish 0 oz
  • White bread 1 slice
  • Arugula 1 bunch
  • Red Caviar 1 teaspoon
  • Goat cheese 0 oz
  • Leek 1 head
  • Salt ½ teaspoon
  • Vinegar essence 1 tablespoon
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

First, prepare the poached egg. Bring water to a boil in a small saucepan, reduce the heat to a minimum, add vinegar and salt. Carefully crack the egg into a separate bowl, ensuring the yolk does not break. Using a whisk, create a small whirlpool in the water and quickly pour the egg into the center. Cook for exactly 3 minutes. Carefully remove the egg with a slotted spoon and place it in ice water.

Step 2

Either toast the slice of bread in a skillet or make a toast in a toaster. Wash and dry the arugula. Slice the white part of the leek into thin rings.

Step 3

Place a couple of slices of cheese on the toast, add arugula, leek, and 2–3 slices of salmon. Gently place the poached egg on top of the salmon, season with freshly ground black pepper, and top with caviar.
