Plum and hot pepper sauce

Ingredients

  • Plums 10 oz
  • Mild Chili Spice 1 piece
  • Ground coriander ½ spoons
  • Basil 4 sprigs
  • Sugar 2 spoons
  • Malt Vinegar 1 tablespoon
  • Port Wine 4 spoons
  • Water 1 glass

Remove the pits from the plum and the seeds from the red chili pepper.

In a saucepan, add the plum and simmer it with the port wine until reduced.

Then pour in the water and add the pepper, bring to a boil, and reduce the heat.

Add finely chopped basil, coriander, sugar, and cook for another 10 minutes.

Add vinegar, season with salt and pepper to taste. Remove from heat and let cool to room temperature.
