Ingredients
- Light "Lamber" cheese, 15% fat content 5 oz
- Porcini Mushrooms 5 oz
- Marinated cherries 0 oz
- Pickled Chanterelles 5 oz
- Scallions 0 oz
- Passata Tomato Sauce 0 oz
- Onion 1 head
- Thyme 3 sprigs
- Wheat Flour 10 oz
- Milk 5 fl oz
- Dry yeast 0 oz
- Olive Oil 4 tablespoons
- Sugar 1 tablespoon
- Salt to taste
- Herbes de Provence 1 tablespoon
Step-by-Step Guide
Step 1
Add 1 tablespoon of sugar to the milk, add the yeast, stir, and let sit for 10 minutes. Then add 1/4 teaspoon of salt, olive oil, and herbs. Mix well.
Step 2
Gradually add the flour while continuously mixing with a whisk. When it becomes difficult to whisk, knead the dough by hand, adding flour little by little. The dough should be soft and elastic. Cover with a towel and place in a warm spot for about 40 minutes. During this time, the volume should double.
Step 3
Punch down the dough and let it rest for another 30 minutes.
Step 4
Dust the work surface with flour and roll out the dough to a thickness of 0.5 cm. Place it in a baking dish, cover with a towel, and let it rise in a warm place for 20 minutes.
Step 5
Grate the cheese on a coarse grater.
Step 6
Finely chop the onion and sauté it in vegetable oil with the mushrooms, seasoning with salt and pepper.
Step 7
Prick the dough with a fork, spread tomato sauce on top, add the mushrooms, halved cherry tomatoes, sprinkle with cheese, and bake at 430°F for 15 minutes.
