Pizza with Pumpkin, Caramelized Onions, Gorgonzola, and Crispy Fried Sage Leaves
Ingredients
- Pumpkin 15 oz
- Olive Oil 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Butter 2 tablespoons
- Onion 1 head
- Garlic 1 clove
- Chopped Sage Leaves to taste
- Pizza Flour 20 oz
- Goat cheese 0 oz
- Melted Cheese 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
In a bowl, mix 400 g of peeled and diced pumpkin with 2 tablespoons of olive oil. Spread on a baking sheet and roast until tender for 30-40 minutes.
Step 3
In a skillet, melt 1 tablespoon of butter and add 1 tablespoon of olive oil. Add thinly sliced onions and sauté for about 40 minutes until the onions begin to caramelize. Add finely chopped garlic and sauté for a few more minutes. Transfer to a plate.
Step 4
In the skillet, melt the remaining butter, add the sage leaves, and fry for 2-3 minutes until crispy.
Step 5
Preheat the oven to 500°F.
Step 6
Roll out the dough into a large circle and transfer it to a baking sheet.
Step 7
On the dough, layer the onions, then the pumpkin, and sprinkle with grated mozzarella and crumbled gorgonzola. Bake for 5-10 minutes until ready. Top with crispy sage leaves and serve.
