Ingredients

  • Wheat Flour 3 cups
  • Water 1 cup
  • Dry yeast 0 oz
  • Sugar 1 teaspoon
  • Salt 1 teaspoon
  • Olive Oil 2 tablespoons
  • Meyer Lemon Juice 1 teaspoon
  • Fresh basil leaves 1 stem
  • Baking Tomatoes 5 oz
  • Shallot 1 head
  • Semi-Smoked Sausage 5 oz
  • Melted Cheese 5 oz
  • Italian chopped parsley 1 bunch

Step-by-Step Guide

Step 1

Add yeast, sugar, salt, and olive oil to room temperature water. Mix until smooth. Let it sit for 5-10 minutes.

Step 2

Add flour (start with 2.5 cups) to the liquid. Begin kneading the dough, adding more flour as needed. The dough should be pliable and slightly sticky.

Step 3

Shape the dough into a ball, flatten it slightly, and place it in a deep container lightly dusted with flour. Cover with a napkin or towel (the dough needs to breathe) and let it rise in a dark, warm place for 1 to 2 hours.

Step 4

Blend the canned tomatoes until smooth. If necessary, add salt, sugar, and lemon juice (balsamic vinegar or white wine vinegar can be used based on preference). Mix well.

Step 5

Once the dough has doubled or tripled in size, gently punch it down. Separate the portion needed for one pizza (about half of the total dough), and roll it out as thinly as possible.

Step 6

Transfer the pizza base to a lightly floured baking sheet (I personally flip it and prepare it on the outer surface, making it easier to remove the finished pizza).

Step 7

Evenly spread the sauce over the dough, leaving a 1-1.5 cm border around the edges.

Step 8

Place fresh basil leaves on top of the sauce (purple basil can be used, but green is much more aromatic).

Step 9

Add sliced shallots (can be substituted with leeks or red salad onions), followed by the bacon.

Step 10

Generously sprinkle grated mozzarella cheese (block mozzarella is preferred, can be substituted with sulguni).

Step 11

Bake in a preheated oven at the highest possible temperature on convection mode on the top rack. Baking time is 5-7 minutes (no longer). Slightly burnt edges indicate that it is fully cooked (this also creates a wood-fired oven effect).

Step 12

Transfer the finished pizza to a cutting board. Lightly drizzle with olive oil (this gives it a unique shine) and sprinkle with dried Italian herbs.

Step 13

Cut into serving pieces and serve.
