Ingredients

  • Passata Tomato Sauce 1 tablespoon
  • Milk 4 spoons
  • Mascarpone Cheese Unagrande 4 spoons
  • Olive Oil 1 tablespoon
  • Chili Flakes ¼ spoons
  • Peeled Cooked Shrimp 5 oz
  • Pink Martini 5 fl oz
  • Fettuccine Pasta 10 oz

Step-by-Step Guide

Step 1

Bring a pot of water to a boil for the pasta and add salt.

Step 2

In a bowl, whisk together the tomato paste and milk, then add the mascarpone and whisk the mixture again.

Step 3

In a wok or large pot, heat the garlic oil. Add the chili flakes and stir. Place the shrimp on top and fry, stirring constantly, for 1 minute (or longer if the shrimp are frozen). The shrimp should be fully cooked and hot.

Step 4

Pour in the pink vermouth and bring to a boil over high heat. Once the vermouth has slightly evaporated, add the pink sauce from the bowl and simmer, stirring, until it is heated through. If the shrimp are frozen, check to make sure they are heated sufficiently: they should be very hot.

Step 5

While the sauce is cooking, add the pasta to salted boiling water and cook for 3 minutes. It’s important not to overcook it. Drain the pasta in a colander, but do not rinse it. Transfer the pasta to the pink sauce and mix gently but thoroughly. Serve in warmed plates or bowls and enjoy immediately.
