Pineapple and Chicken Quesadilla
Ingredients
- Butter 5 oz
- Ground Black Pepper to taste
- Salt to taste
- Pineapple 15 oz
- Cilantro to taste
- Skin-On Chicken Breasts 3 pieces
- Tortillas 8 pieces
- Grated Pecorino Pepato Cheese 3 cups
- Barbecue sauce 3 tablespoons
Step-by-Step Guide
Step 1
To grill the pineapple, skewer the pineapple pieces and grill them over low heat on a grill or in a pan.
Step 2
Season the chicken with salt, pepper, and other spices. Grill the chicken on both sides. Once the chicken is grilled, brush it with barbecue sauce and chop it finely.
Step 3
Heat a skillet over medium heat, lightly warm and fry the tortillas until golden brown on both sides. On 4 tortillas, place some grated cheese, chicken, and pineapple pieces. Optionally, add cilantro. Brush with more barbecue sauce on top. Cover with a second tortilla. Place the quesadillas in the skillet and heat until the cheese melts. Cut the finished quesadillas.
