Description

Pinchos with ham are a Spanish classic that can be found in almost any bar for breakfast.

Ingredients

  • French Baguette 1 piece
  • Ham 5 oz
  • Pitted olives ½ jar
  • Marinated cherries 5 pieces
  • Potato 1 piece
  • Garlic 2 cloves
  • Pesto 2 tablespoons
  • Courgette 1 piece
  • Orange Bell Peppers 2 pieces
  • Blue Cheese 0 oz
  • Canned Mackerel in Oil 1 can
  • Spanish onions 1 piece
  • Fresh basil leaves 1 bunch
  • Olive Oil to taste

Step-by-Step Guide

Step 1

Slice the baguette into pieces about 1 cm thick and lightly toast them in a small amount of olive oil.

Step 2

For the ham pinchos: For the sauce, mash the ripe tomato, add 1 teaspoon of olive oil, chopped basil, salt, and pepper to taste, and mix. Spread the sauce on a slice of baguette, place a slice of ham on top, and garnish with an olive, half a cherry tomato, and a basil leaf, securing everything with a toothpick or a special skewer for canapés. I added a bit of pesto on top of the ham for a more piquant flavor.

Step 3

For the sardine pinchos: For the sauce, grill large pieces of bell pepper, 2 cloves of garlic, and half an onion in a skillet, then blend everything together, seasoning with olive oil, salt, and pepper to taste. Spread the sauce on a slice of baguette, place a piece of sardine on top, and garnish with slices of red onion, a basil leaf, and olives.

Step 4

For the zucchini pinchos: Immediately after toasting, while the baguette slices are still warm, generously spread cheese on them. Slice the zucchini into rounds, cut the bell pepper into large pieces, and sauté everything in a grill pan or a regular skillet with a small amount of olive oil. After sautéing, place the vegetables in a bowl, season with salt and mix; you can also add finely chopped garlic. Place a round of zucchini, a piece of bell pepper, and garnish with a basil leaf on top of the baguette slice.
